Pasta al Pomodoro

After a long weekend traveling, I was really craving a homemade dinner. I wanted something easy to pull together and I'm always drawn to recipes with short ingredient lists (they usually equate to quick and simple). When I came across this recipe I knew it would be perfect. I know that it's so tempting to reach for a jar of store bought tomato sauce but it's so worth taking the extra 20 minutes to make it from scratch. It might sound intimidating at first, but it's very easy. The added effort was evident in every bite of this yummy pasta dish.

I used this recipe, featured on the May 2011 cover Bon Appetit. I followed the recipe exactly and I got the approval from yt, who originally thought it would taste "boring and plain". I followed the recipe exactly and it didn't disappoint. I definitely recommend this one!

  10. I'm the same way with spaghetti. I think biting through all those noodles is so sublime.

This is also what I love about simple Italian home cooking. It's so easy, but with just a few ingredients, can taste SO good. I bet this recipe would be awesome with a little pancetta added in too -- kind of like a simplified amatriciana!
