a peachy dessert {for two}.

This was a little bit of an experiment in the kitchen. I didn't follow a recipe, or have much direction, but the end result was not only edible, but yummy! If you have a few extra peaches lying around, and want a quick and easy dessert, I suggest you give this a try! 


here's what you'll need...
for the filling
2-3 peaches, pitted and chopped into sizable pieces
juice of 1/2 lemon
1 tablespoon sugar
1 tablespoon brown sugar
1 1/2 tablespoons flour
pinch of salt

for the topping
1/2 cup flour
1/4 cup old fashioned oats
1/4 cup nuts (I used a mix of pecans and almonds)
1/4 cup sugar
1/4 stick butter, chopped into small pieces
1-2 tablespoons water

here's what to do... 
preheat the oven to 350 degrees. mix all of the filling ingredients in a bowl and set aside. in a food processor, mix all of the topping ingredients except for the water and pulse until combined. slowly add water, a few drops at a time until the mixture is crumbly and a bit moist. place filling in a small baking dish and spoon the topping over the peaches. bake for 20-25 minutes until the topping is firm to the touch and the filling is bubbling.

DOING DECALS

I've been decorating out apartment with purpose and trying my best not to purchase pieces that don't make sense, that I don't need, and that inevitably I will tire of and want to replace. I stumbled across the below decals while searching for some artwork for a few empty walls and think they would work just as well if not better. I'm in love with the simple silhouettes and purchased the first decal to put on the wall behind our small kitchen table. The cost is low, so you don't have commit for years to come... and bonus - no hanging and no holes!

Wedding Week: the details


I never realized how many decisions actually go into pulling together a wedding. There are the important ones, like what food do we serve, and where should we host our wedding, and who should we invite? And then there are the ones that seem important, are slightly overwhelming, and take up way too much time and energy - but in the end, really make a wedding {in my opinion}. These smaller decisions include lengthy discussions around invitation wording and fonts, chair and linen colors, floral details and design, cake flavors and toppers, lighting pattens and placement, and so many more. Here are some of my favorite details from our wedding:



the floral/ lighting
bouquets and boutonnières: a stem above put together some of the most beautiful bouquets i have ever seen. the bridesmaids carried an arrangement with calla lilies, pin cushion protea, billy balls, ranunculus - all in bright yellow. i carried an arrangement of while calla lilies - wrapped in some of the fabric from my wedding dress. the boys wore calla lilies and yt matched me - with white :)
tables
we had two arrangements of flowers for the dinner tables. one was a low arrangement with a collection of modern black and white vases, each with a specific one of the yellow flowers listed above. the second was a tall white cylindrical vase, filled with airy and delicate oncidium orchids. we chose black linens, with a silver chair and a black cushion and lots of candles to complete the look. 
lighting
frost brought the outside in, with a beautiful leafy pattern on all of our walls. the amber color complimented the yellow accents throughout the room. 

the escort cards/ paper goods
we choose a simple and casual calligraphy on light gray card stock from paper source. the amazing calligrapher stacey shapiro was the hand behind every escort card and all of our signage {frames from ikea}. all of our save the dates, invites, table numbers and thank you notes are via ellie snow at hello tenfold!

Wedding Week: the reception


After the ceremony, the courtyard was quickly transformed to be the location of our cocktail hour (still no rain - happy dance again!!). We wanted the party to get started immediately after we were pronounced husband and wife! Servers passed champagne and kir royals, the bars opened, and we passed a plethora of hors d'oeuvres. Foodie note: hors d'oeuvres included: cheese burger sliders, grapes coated in goat cheese and pistachios, pesto panini lollipops, cucumber rounds with peanut chicken, and small lamb shanks. yum! We had a jazz quartet playing some of our favorite songs in the background. 

Cocktail hour winded down, and we invited guests inside to the main ballroom. The ballroom was one of the reasons I choose this venue - it was a blank canvas. We selected every detail - from the chairs, to the linens, to the lighting, and every single element of decor. The completed look was exactly what I had hoped - modern with a touch of whimsy...

We were introduced as Mr. and Mrs., gave a short welcome speech and then invited our dad's up to give toasts. Of course I shed a few tears during my dads heart felt speech {it was inevitable}. Both groomsmen had our guests hysterically laughing, telling stories of how we met {it was not love at first sight!} and some of the quirks of our relationship. It was the best. We shared our first dance to this version of a popular song, and my dad and I danced to a song he used to sing to me when I was little - but again we used a more unique version

Dinner was tastier than I could have imagined. Foodie note: We served a bibb lettuce salad with marcona almonds, shaved manchego cheese and a cider vinaigrette. Our second course was lemon risotto with a jumbo grilled shrimp. For the main course we served a plate of chianti braised short rib and mustard crusted salmon, over a bed of polenta and green beans. We also put out a sweets table with chocolate covered strawberries, canolis, creme brulee, cheesecake lollipops, cookies from my favorite bakery in new york, and wedding cake. Our wedding cake was layers of chocolate and vanilla hazelnut cake, with creme brulee and salted caramel filling - all topped with creamy delicious buttercream. 

We spent the remainder of the evening eating, drinking, dancing - and loving every single moment with all of our amazing friends and family. It went by way too quickly - but it could not have been more perfect.

Wedding Week: the ceremony


It was truly important to both of us that our ceremony reflect us as a couple. We aren't very religious, so we opted to have a judge officiate our ceremony {p.s. his name was Michael Jordan ... is that awesome or is that awesome?}. We wanted to keep things short and sweet - stick to the important parts.

Our ceremony was held in the courtyard of our wedding venue - Ivy Room. I loved that our guests didn't have to move locations between the ceremony and reception - and the gorgeous courtyard stole my heart! Despite the small chance of rain in the forecast we were able to make it outside for the ceremony {happy dance!!} and didn't see a drop of rain all day! I tried not to stress about the weather, but it's really hard not to. 

Right before the ceremony was probably the most anxious part of the day for me. I seriously could not sit still and was pacing outside of the bridal suite - stupid nerves! Once we were lined up ready to walk, my attention turned to my father ... {he was more nervous than me} major pep talks were needed! 

We had a harpist and a violinist play for the ceremony. The bridal party walked down the aisle to Air On G String. I walked down to the traditional {but lovely} Canon in D.  The recessional was Stand By Me. My dad {true to form} cried the entire way down the aisle and as a result, there was not a dry eye in the house. 

After a short welcome by the judge, we exchanged some personal messages we wrote for each other. I will forever remember these. We then recited somewhat traditional wedding vows that we wrote together and then exchanged rings. We sealed the deal with a kiss and then - we were married!!! 

btw: {at one point earlier in the ceremony I went in for a kiss - I got caught up in the vows!! - and it was awkward}.

Wedding Week: the attire


I knew exactly what I wanted in a wedding dress. Sweetheart neckline, semi large skirt {preferably with pockets}, and hell no, I did not want anything form fitting around my hips and/or behind. I knew exactly what I wanted in a wedding dress - and then I bought the exact opposite.

Wedding dress shopping never resulted in an "ah-ha" moment, tears of joy, or a real sense that I had found the "one". Instead, I had an unsuccessful trip shopping in Manhattan with my mother, sisters, and grandmother, and then a bit of a panic attack after I purchased the below dress with my mother in law in Chicago. Despite questioning my choice early on, I fell head over heels in love with my dress, and cannot imagine wearing any other on my wedding day. 

I wore a simple veil that consisted of one layer of ivory tool - just for pictures and the ceremony. I also switched back and forth between a feminine flowery ivory belt, and a clean modern black belt throughout the day. 

My bridesmaids were thrilled that I chose short black silk taffeta dresses from J.Crew for them. They chose between two pairs of silver pumps to add a little sparkle to their look. The guys wore classic black tuxedos with black skinny ties {that were gifted to them the morning of the wedding}.

CHOCOLATE ALMOND BISCOTTI

It's really hard for me to end a meal without something sweet - and if it's chocolate? Even better. I made a batch of this chocolate almond biscotti and one {or two ... let's be honest} is just enough sweet chocolaty goodness to satisfy my dessert cravings. Some people have a strong aversion about adding nuts to desserts - if you're one of them {we can't be friends} and you can just leave them out. I kid about the friends things, my mother hates nuts in her desserts and we're still quite close :)


Here's what you'll need... 
1/2 cup of slivered roasted almonds
1/2 cup of unsalted butter, softened
3/4 cup of sugar
2 large eggs
2 cups of flour (plus some for your working surface)
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1 teaspoon of vanilla extract
1/4 cup of cocoa powder



Here's what to do...
Preheat oven to 350 degrees
Place the butter in the bowl of a stand up mixer and beat for 2 minutes. Add in the sugar, and beat for another two minutes. Add eggs, one at a time, and continue beating, making sure to scrape down the sides of the bowl as needed. Beat in vanilla extract. 
Add the flour, baking powder, cocoa powder and salt. Beat until the mixture is combined. 
On a well floured surface, divide the dough into two equal sized parts. Shape into logs that are about 1 inch thick and 5 inches wide. Place onto baking sheet and bake for about 25-35 minutes until firm to the touch and baked through. 
Remove from the oven and let cool for about five minutes. Cut into 1/2 inch thick slices and place cut side down on baking sheet. Bake for an additional 5 minutes (until they are lightly toasted).

from blogger to blogger... {and a recipe}

Warning: this is a long post. 

To say that I've been jealous of other blogs would be an understatement. With the perfect graphics, professional looking photography, and the original, thoughtful, and creative content that's out there, it's hard not to be jealous once in a while. 

As you know readers, I absolutely love food. I obsessively plan meals and daydream about what my weekend cooking will entail. I also love sharing my culinary undertakings on this blog with you. What you might not know, is that a good 90% of what I cook doesn't actually make it onto this blog. It's not because I'm holding out on you, or because my meals {or desserts or snacks} fell short, it's because it takes so much effort, and patience, and skill to get those recipes onto this blog and looking good! 

Sometimes my camera isn't charged. 
Sometimes styling my food in the perfect lighting, with the perfect props, is just not appealing.
Sometimes I lack perfect lighting {hello dinner time, or old windows that tinted all of my photos blue}. 
Sometimes I lack the perfect props {I do not own 100 gorgeous plates in all sorts of shapes and sizes}.
Sometimes I'm starving and do not care about taking a photo, my focus is on inhaling my meal. 
Sometimes yt is starving. 
Sometimes I'm feeding friends who are starving. 
Sometimes whatever I've made is just not pretty
Sometimes I wait to long too write my post and I forget what I did.
Sometimes I try to do everything right - but my photos still suck! 

Sometimes by the time I get home, or finish cooking, the very last thing I want to do is: stop, wait, style, photograph, rearrange, restyle, re-photograph, take notes, or do anything else but eat!

Other bloggers out there who post about food - do you have the same problem? Are you ever jealous of the insanely beautiful food blogs out there?

The other night, I made ravioli from scratch. Dough, filling, and sauce. I was really proud of the finished product, but alas, it was date night and did not want to ruin the mood by pausing to snap a plethora of photos... so instead I snapped one via instagram. It will have to do :)




for the dough: i used this recipe. pretty standard, but i doubled it and it was the perfect amount for our ravioli. 

for the filling
6 cups of fresh baby spinach
1 glove garlic, minced
1 tablespoon olive oil
8 oz of ricotta

heat olive oil in large pan over medium heat and add spinach and garlic. saute until spinach is entirely wilted and cooked through (about five minutes). allow to cool and then blend with ricotta cheese. add salt and pepper to taste. 

to assemble: roll out dough as instructed into thin sheets (about five inches wide). place small spoonfuls of filling onto dough about 2 inches apart. take a second sheet of dough, and lay over the first. use your fingers to smooth down the area around each spoonful of filling and seal two sheets of dough together. using a small circular cookie cutter {or ravioli cutter if you want to get fancy} cut out each ravioli, making sure not to get too close to the filling. lightly flour each ravioli so they don't stick together or to your working surface. set aside. 

to cook: boil a large pot of water and cook ravioli for about 4 minutes. 

for the sauce
4 large vine ripe tomatoes
10 basil leaves
1 clove garlic 
1/2 a small onion
1 tablespoon olive oil
2 tablespoons tomato paste
1/2 tsp italian seasoning
1/2 tsp parsley
1/4 tsp red pepper flakes
salt and pepper to taste

add first 4 ingredients to a blender/food processor and puree {leaving some chunks if you like a thicker sauce}. heat olive oil in pan over medium heat and added blended mixture. stir in tomato paste and spices and simmer for 20 minutes until sauce thickens. 

then, you are done! and if you'd like to, you can take some photos and blog about it - but for this meal, i recommend you just eat :)

ACCENTS

Hello, Monday. We meet again. Although I'll be off most Mondays (and therefore they carry a bit of a different meaning for me now), this Monday I'm headed into work just like everyone else. Womp womp. 

I spent my Sunday painting some of the boring beige walls that are in our apartment. They aren't so bad - a nice neutral, but they definitely needed a little color. I'm finishing the job on Tuesday. So far I'm loving our choices! The first two are on various walls in our living room and the last will be in our bathroom (I almost went with pink in the bathroom because surprisingly yt agreed to it, but I decided it was a bit to girly). 

All the little touches really make this apartment feel like home :)

this weekend...

i think this weekend is going to be a good one.


friday night i'm determined to make a casual summer dinner at home - and perhaps even set our table with some candles and fresh flowers. we're in need of a date night that doesn't consist of ordering in pizza {its been happening too frequently as of late}. the menu is: mixed green salad with grilled peaches, goat cheese, chopped pecans, and a bit of red onion with a homemade balsamic vinegar {inspired by this recipe} - spinach and ricotta ravioli with homemade pasta dough {of course!} topped with a simple tomato sauce and this biscotti for dessert.

saturday i'm working :)

sunday i'm trying to convince yt to take me blueberry picking so i can make a big blueberry pie, or little individual blueberry crisps, or blueberry muffins, or all of the above! you would think that would be enough motivation right there, right? we're also making a trip to home depot for some paint. tuesday i'll be painting a small accent wall in our living room light gray, and then another tiny wall {literally no more than 3 feet wide} a dark midnight blue. i'm so excited to see the final product - and to share pictures eventually!

lastly, breaking bad is back on sunday. we're a bit addicted in our home! we'll be on the couch sunday night ready to watch - perhaps with some popcorn and candy :)

Blueberry Scones


I went to the farmers market on Saturday. The heat and extreme humidity resulted in a less than stellar farmers market experience. Despite my sticky discomfort, I purchased: a strawberry smoothie, a pint of blueberries, a basil plant, fresh corn, and some vine ripe tomatoes.  Once I was home and showered, I was able to deem my trip a success :)

The yummy blueberry scones that resulted from my tip didn't hurt matters. Flakey, and sweet, with hints of tart fruit throughout = major yumminess. 


Here's what you'll need...
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon grated lemon zest
1 stick cold unsalted butter, grated
1 large egg, lightly beaten
1/2 cup cold heavy cream + 1 tablespoon
1 cup blueberries


Here's what to do... 
Preheat the oven to 400 degrees F. In a large bowl or stand up mixer, mix together flour, sugar, baking powder, lemon zest and salt. Add in the cold butter with your fingers or at the lowest speed. Combine the egg and 1/2 cup heavy cream in a separate bowl, and slowly pour into the butter/flour mixture. Mix until just blended. Add in blueberries.

On a floured surface, kneed the dough into a ball. The mixture will be crumbly. Form into a large flat disc, about 1 inch thick and 8-10 inches in diameter. Cut the circle into 8 triangular pieces. Brush the top of the scones with the remaining 1 tablespoon of heavy cream.

Bake for 20-25 minutes, until the tops are browned.

Steamed Mussels and Shrimp

I cook a lot - but I still get slightly intimidated when trying something new. This was my first time making mussels at home, and it was pretty apparent during my conversation with the man at the fish counter in Whole Foods..
"do I put them in the fridge or the freezer?"..."fridge! if you put them in the freezer you will kill them"
"and the ones that don't open after cooking are dead, right?" ... "yes"
"and what about the ones that are opened now?" ... "those are also dead, we didn't give you any of those"

I went home with a couple pounds of mussels, and all of my instructions, and got ready to make a tasty summer dinner. It was a sure success... and of course I loved that dinner took no more than 15 minutes to pull together!




Here's what you'll need...
1 1/2 lbs of mussels, cleaned
1 lb of shrimp, peeled and deveined
1 1/2 cups of white wine
1/4 cup chopped shallots
1 tablespoon of finely minced garlic
juice of 2 lemons
4 tablespoons of butter
2 tablespoons of fresh parsley, chopped

Here's what to do...
In a large pot, combine white wine, shallots, garlic, and juice of one lemon. Bring to a simmer and add mussels and cover. With heat on medium/low, cook mussels for about 3 minutes, then add your shrimp to the pot. Cook for an addition 3 minutes. Remove from head and add butter, remaining lemon juice and parsley. Allow butter to melt and stir carefully once or twice to incorporate over all of the seafood.

Serve in a shallow bowl with lots of the broth (and with some crusty bread for dipping!). Serves 2.

DIY: Jackson Pollock Canvas

we were in need of some artwork for above our couch in our new apartment. its a large wall, and we have a large couch, but we did not have the funds for a large art investment - so DIY seemed like the best option. we wanted something abstract and something simple, so we turned to jackson pollock for a bit of inspiration. the whole project cost less than $100 and could not have been easier. plus, painting like a crazy person for the afternoon was totally liberating, relaxing, and fun! if you're in need of a piece of art (any size!) for a space in your home, i would recommend you take a stab at this DIY project. here's how:

first check out a few original pieces (this one hangs in the moma in nyc). if you can't view them in person, google images works just fine :)


then, head to home depot. you'll need a few bottles of sample paints (the same that you use to paint a wall). the color options are seriously endless, and the sample size containers go for $2-$3 a pop, depending on the brand and finish. I bought 6 for a 3 x 4 foot canvas which was more than enough! 

you'll need: 
  1. a canvas (size can vary): $40 for a 3 x 4 foot cavas
  2. sample house paints (2+ colors depending on the size of your canvas and color preferences): $2 - $3 each
  3. a brush for each color $1 each
  4. a tarp to line your working surface $5


find a working space and set up! wear clothes you don't mind getting a bit dirty (same goes for the space!). 


get painting! i did about 2-3 layers of each color. there were two "strokes" i used to get the below look:

"the swat" - slap the brush down about 6 inches above the canvas, almost like you are swatting a fly or hammering a nail 
"the dribble" or "the drip" - with a large amount of paint on the brush, simply move your hand in lines or circles above the canvas

honestly, whatever works! but these seemed to do the trick for me. 


ta-da!


i do think that the painting needs one splat of a fun color - don't you? i'm thinking mint, pink, or coral? maybe one of each? what do you think? then it's done!

days off...

I'm just going to throw it out there... this is a random post.

1. We got our wedding photos back!!! There are 1,400 of them. Still trying to sort through them all but this is possibly one of my favorites.. Sure yt isn't in it, but my fun green shoes are... and they were equally important to the wedding day, right?! (kidding).


2. I worked Saturday, had Sunday off, worked Monday, and now have Tuesday and Wednesday off. This new schedule is taking a bit of getting used to ... but I don't mind it at all! It's kind of nice to have my own little schedule - and I never really did much on Saturday nights anyway :)

3. yt's schedule is equally crazy so we have today off together - I think bike rides, brunch, and a little shopping are in the plans.

4. I changed my name (legally), and its so weird. Anytime anyone asks me my name I get a confused look on my face and hesitate, which is embarrassing when that is the easiest and simplest question you can be asked.

5. We have made homemade cookies three times this week - this is a habit that needs to stop immediately.

6. Tomorrow is the 4th of July - I think I'll be starting the day at the farmers market, squeeze in some lounging with a book in the sun, and end with some burgers or brats on the grill!
